Fit Foodie: From 6 to 3

Who would’ve known that it would be ridiculously hard going from our cooking for the 6 of us to my husband, baby bear and myself???  I have way too much food leftover and planned way too many meals.  Gosh… I thought I had gotten better with this estimation but my veggies going bad in the drawer would beg to differ.  The best part of this process though…lots of new things to try without the quirks of the Bigs.

We replaced the crescent rolls as the crust with a gluten free pizza dough mix that I found at the store.  We are still trying to make the switch to all things gluten free.

This is another from the I Quit Sugar cookbook by Sarah Wilson.  I was able to snag a couple recipes out of my mom’s copy before coming back home.  Definitely purchasing my own soon!

I left this one up to my hubby to do as I was trying to paint corbels for our over the door shelf.  Needless to say…he went a little crazy with the cheese, but hey!  There are worse things in life!  LOL!

I think out of everything we tried…this was my hands down favorite.  I can almost never get my husband to be happy about eggplant.  He is the “Mikey” in the house but he will not eat eggplant and that’s one of my favorites from my childhood.  No surprise really growing up in an Italian household LOL!
