Fit Foodie: All the protein

Lately I have been stumped on what to make.  We are hitting the end of the school year and with that, the end of dance class & nearing the end of baseball/t-ball season.  What this means in our kitchen?  Odd ingredients.  We have tons of menu planned recipes that were never made and random ingredients sitting in the cabinets.  Why?  The first picture below is why.  When in doubt I cook one of two types of food.  Italian or Mexican.  I was raised in an Italian house and it is simply what comes natural.  (Thank you Grandma Angie & Pop pop Frank!)  So here I am surviving on food for my soul and protein in shapes & forms…oh and a few things banana related.  I cannot stand to have food wasted!  We will get back on track in due time.  For now, I am going to sit back and enjoy.
