Coconut Flour Banana Bread or Muffins

These are definitely denser than my normal banana bread but they were still very tasty.  (Made with regular coconut oil.)  I’m trying to find more recipes to help cut more grains out of our baking.  The family did have one or two but I mostly ate them pre-run as fuel and I have to say that it definitely did the job.  My run of 10 miles didn’t need any fueling during at all!  I will admit that I mostly grabbed one and smeared nutella all over it BUT that’s a normal for me in this house.  Nutella covers all.

Ground turkey fajitas

I used ground turkey, fajita seasoning, peppers, onions and mushrooms.  The kids and hubby had their’s over brown rice with cheddar cheese melted over top.

Gluten free brownies

I used Betty Crocker mix that was leftover from a party purchase and wasn’t used.  The kids and I were in the mood for sweets.  I subbed the butter for coconut oil.  They came out so amazing.

Take 2: Coconut Flour Banana Bread or Muffins

After the first batches success, I tried it again with fractionated coconut oil.  I also added pecans and organic maple syrup on the top.  They were okay.  I think the nuts were a little too much for me.  Next time, I’m going back to the original attempt but with the fractionated coconut oil.
