Fit Foodie: Cooking faster

I’ve been failing lately.  Well I guess that’s still not as bad as we used to.  I just simply haven’t had the time with all of the sports, appointments and other things going on to make the more complicated meals BUT I have at least found a medium between fast and healthy!  Here’s a few that we’ve done…

Crab, asparagus & wild rice

Put crab, cut asparagus, Mrs. Dash & 1/2 unsalted butter in the microwave in my corning ware covered for 10 minutes.  Made the rice separately and mixed it all together!

Watermelon bowl fruit salad!

  • Personal sized watermelon (cut open like a pumpkin)
  • Cantaloupe
  • Honey dew
  • Grapes
  • Blueberries
  • Strawberries
