Lighter Eggplant Parmesan
We made a couple substitutions to the recipe due to what we had in the house. My sauce was a mix of the leftover Crockpot Italian Sloppy Joes http://www.skinnytaste.com/2013/01/crock-pot-italian-sloppy-joe.html, a few tomatoes, garlic and leftover jarred sauce. Also, we didn’t have the ricotta cheese so we didn’t do the egg/cheese mix. All and all, it was delicious!
Pumpkin Chocolate Chip Brownies
Dessert for the night! I was still in search of a pumpkin recipe to use up the rest of my leftover pumpkin puree. Let’s just say that the late night baby soother (aka my husband) did not let these last through to the next morning!
That’s all we did this week and believe me that was a feat in itself. Miss Hannah is a very happy and good baby, but the adjustment from 3 kidlets to 4 while healing is definitely time-consuming.
